Classic old-fashioned seven layer salad, perfect for parties and cookouts.

Salad:
- 1 large head iceberg lettuce, chopped
- 1 cup chopped tomatoes
- 1 cup frozen peas, thawed
- 4 hard boiled eggs, sliced or chopped
- 2 cups shredded cheddar cheese
- 2 tablespoons minced onion
- 8 slices bacon, cooked crisp and crumbled
Dressing:
- 1 cup mayonnaise
- 2 tablespoons sour cream
- 1 teaspoon sugar
- Salt and black pepper to taste
Garnish:
- Chopped fresh parsley
- Light sprinkle of paprika
- Reserved bacon (optional)
- Wash and dry the lettuce well. Excess water will make the salad soggy.
- In a large clear glass bowl, layer the chopped lettuce on the bottom.
- Add the peas in an even layer over the lettuce.
- Sprinkle on the minced onion.
- Add the sliced or chopped boiled eggs.
- Layer the chopped tomatoes over the eggs.
- Spread the shredded cheddar cheese evenly over the top.
- Sprinkle the crumbled bacon over the cheese (or save it for the top).
- In a small bowl, mix together the mayonnaise, sour cream, sugar, salt, and pepper.
- Carefully spread the dressing over the top of the salad, sealing all the way to the edges of the bowl.
- Garnish with chopped parsley and a dusting of paprika.
- Cover and refrigerate for at least 4 hours before serving, preferably overnight.
