- 1 1/2 pounds Jerusalem artichokes
- 2 tablespoons olive oil
- 3-4 cloves garlic, minced
- 1/2 cup grated cheese (Parmesan, Asiago, or sharp cheddar)
- Salt and pepper to taste
- Optional: fresh herbs like thyme or rosemary
- Preheat oven to 400°F.
- Prepare and chop Jerusalem artichokes as in the basic recipe.
- Toss with olive oil, garlic, salt, and pepper.
- Roast for 25–30 minutes until nearly tender.
- Sprinkle cheese evenly over the top.
- Return to oven for 5–10 minutes, until cheese melts and lightly browns.
