A good recipe to try for those new to working with sunchokes.

Ingredients

Units Scale
  • 1 1/2 pounds Jerusalem artichokes
  • 2-3 tablespoons olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F.
  2. Scrub Jerusalem artichokes well and trim off any damaged spots. Peeling is optional.
  3. Cut into evenly sized chunks or slices.
  4. Toss with olive oil, salt, and pepper.
  5. Spread in a single layer on a baking sheet.
  6. Roast for 30–40 minutes, stirring once, until golden and tender.
