A good recipe to try for those new to working with sunchokes.

- 1 1/2 pounds Jerusalem artichokes
- 2-3 tablespoons olive oil
- Salt and black pepper, to taste
- Preheat oven to 400°F.
- Scrub Jerusalem artichokes well and trim off any damaged spots. Peeling is optional.
- Cut into evenly sized chunks or slices.
- Toss with olive oil, salt, and pepper.
- Spread in a single layer on a baking sheet.
- Roast for 30–40 minutes, stirring once, until golden and tender.
