Homemade Broccoli Soup – Easy, Creamy and Delicious

When broccoli is coming in fast and furious from the garden, I enjoy whipping up a batch of homemade broccoli soup. This recipe easy to make, and it includes other fresh garden veggies. We like having visible veggies in our soup, but if you want a smooth soup, feel free to puree it in a blender. Just be careful not to overload and splash yourself if you puree it while it's hot.

Broccoli Soup is Easy to Make

The recipe is simple enough that my teenage sons can make it, and everything cooks in one pot so there are not a lot of dirty dishes. Pair this soup up with some fresh bread or a salad, and you've got a quick and nourishing meal. Homemade chicken broth is great if you have it. If you like potatoes in your broccoli soup, feel free to dice up a couple and add them with the rest of vegetables. This homemade cream of broccoli soup recipe makes an easy and delicious soup to warm you up from the inside out.

Ingredients

Units Scale
  • 1/4 cup butter
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 1 medium head broccoli, cut into florets
  • 1 carrot, chopped
  • 1/4 cup cornstarch
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 teaspoon curry powder
  • 1/8 teaspoon cayenne pepper
  • salt to taste

Instructions

In a large stockpot, add onions, celery and butter. Cook until onions are translucent. Add carrots and broccoli and cook until they are tender.

Add broth and cornstarch; cook, stirring constantly, until slightly thickened

Add cream, paprika, black pepper, curry and cayenne. Season to taste with salt. Serve piping hot. Do not allow to boil, or cream will curdle. Makes around six good sized servings.

  1. I have broccoli in my deep freeze that had been blanched and frozen ….can I use that ,,,.. JOHN ..ps a senior new to cooking

  2. Thanks for stopping by, ladies. I do have to fight the cabbage butterflies for the broccoli, but I am determined. The soup also reheats well if there are any leftovers.
