Easy Cranberry Walnut Pie – Part Pie, Part Bar Cookie, All Tasty!

I had a vision. When I started brainstorming about this post, I thought, “What would make a better Thanksgiving dessert than combining some of my favorite flavors into a cranberry walnut pie?”

Alas, recipe attempt #1 was a complete bomb. It turned out way too sweet, and the texture was just wrong. The rest of the family refused to eat it, so I ended up eating pie for a week. Ugh. Thankfully, round two went much better. I ended up with a pie/bar cookie hybrid that goes together without a fuss. The “secret ingredient” raspberries add a little extra natural sweetness so you can cut back on the sugar and win over those who may not be big cranberry lovers. Cranberries have some natural pectin (which is why cranberry sauce sets up), but adding cornstarch gives the filling a more velvety texture. If you don't have raspberries available, you can substitute diced pear or apple.

Husband and boys both gave it a thumbs up, and as much as I like pie and this version is tasty, I'm relieved that I won't be eating it for an entire week.

Easy Cranberry Walnut Pie

Ingredients

Cranberry Filling:

  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 2 cups fresh or frozen cranberries
  • 1/2 cup raspberries, tightly packed, fresh or frozen
  • 1 tablespoon butter
  • 1 teaspoon almond extract
  • 1/2 cup chopped walnuts

Oatmeal Crust/Topping:

  • 1/2 cup + 2 tablespoons old-fashioned or quick-cooking oats
  • 1 cup all purpose flour or gluten free flour blend
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1/4 cup + 2 teaspoons butter, softened
  • 1 teaspoon vanilla extract
  • 1 egg

To make cranberry filling:

Whisk together sugar and cornstarch (to avoid lumps). Add all filling ingredients except walnuts and extract to a heavy bottom sauce pan.

Cook until cranberries have popped and mixture starts to thicken. Remove from heat and stir in walnuts and almond extract. Set aside and allow to cool while prepping the crust.

To make oatmeal dough:

Mix flour, 1/2 cup oats, the baking powder, baking soda, cinnamon and salt in large bowl; set aside. Stir sugar, 1/4 cup butter, vanilla and egg in medium bowl with fork until smooth; stir into flour mixture until blended. Reserve 1/2 cup dough in small bowl for topping.

Pat remainder of the dough in an ungreased 9 inch pie pan, patting evenly up the sides and on the bottom to create the crust. Spread cranberry filling over crust. Add 2 tablespoons oats and the butter to reserved dough; mix with pastry blender or fork until crumbly. Drop small spoonfuls of oat mixture evenly over cranberry filling.

Bake at 350°F until lightly browned (approximately 20-25 minutes).

Cool and slice. Serve with vanilla ice cream, if desired. Makes 8 servings.

    1. Walnuts have a fairly high tannin level. If you soak them in salt water overnight, and then dehydrate until crisp to make “crispy nuts”, they are fabulous! They taste almost like candied nuts – but they aren’t. We’ve been blessed to get an abundance of walnuts in the shell from a neighbor’s trees, so each year we process them this way. You can read more in the post, “How to Process Walnuts“. Of course, pecans are great, too. 🙂

I think the Excalibur dehydrator would be the most helpful and useful right now because it’d be nice to have dehydrated fruits veggies etc. The Blendtec would also be really helpful because it seems to be an awesome product to make smoothies and various other yummies with it.

  112. i am borderline diabetic. Is it ok to exchange half or all of the sugar with stevia? Thanks for the great recipe!

    1. Are you talking about the white powder stevia or raw green stevia? The white stuff would work, and you would use less, unless you have the cup for cup type. The green has different baking properties, and you would use a much lesser amount. The oatmeal, nuts and butter should slow down potential blood sugar spikes, and I’m sure you watch your portions of any sweets.

          I’m not diabetic, but am following an eating plan that eliminates sugar and primarily replaces it with sugar. I already sent a copy of this recipe to my mom with the notation that it looks like it would convert easily to a low-carb recipe using almond flour and stevia as substitutes for the flour and sugar.

  115. Lusting after the Blentec – I had the chance at tasting food done up in a Vitamix, it was so smooth and creamy! I can’t wait to get one of these tools in my kitchen. Also the dehydrator – I used to do my on WAP Crispy Nuts but have stopped since it takes up so much time and space in the oven.   123. It’s a toss up now, that I’ve read a little more about the SousVide, I wanted the blender at first…now I’m kinda thinking the SousVide would be nice! Not that I wouldn’t take any of them…but I have nice cutting boards, and a dehydrator not to mention that wonderful cheese press already, and while more than one is nice at times…something I don’t have would be nicer! ;-))

I’ve been watching all the cranberries on sale lately at the grocery store and wanting to make something other than cranberry sauce on Thanksgiving, this looks delicious and I could try it out and then serve it at Thanksgiving also….after I taste tested it of course lol. Would love the SousVide, it’s been on my wishlist for a while but way past our budget, but I’ve heard wonderful reviews of it, I am notorious at burning or under-cooking meat.

    1. I have a great cranberry salsa recipe that has oranges in it. It’s really super to have along side roasted pork or any meat, actually. You can probably find it on Coastal Living’s web site. I got it out of their magazine.
